Salt was harvested here from Roman times until the pans closed commercially in the 1980s, and the shallow, mineral-rich basins now form a reserve where thousands of flamingos gather to feed most of the year. A network of paths and a small visitor centre let people get unusually close views of the birds without disturbing them, with the old evaporation ponds still clearly laid out.
