The Salina di Cervia is the only remaining working salt pan on the Romagna coast, producing 'sale dolce di Cervia' (sweet salt) — lower in bitter magnesium than Atlantic sea salts, making it the preferred salt of Italian chefs. Pink flamingos and avocets feed in the pans year-round alongside the salt harvest.
